Uncover and cook until liquid has evaporated and browned bits start to form on bottom of pot, 5 to 10 minutes. ![]() Cover and cook, stirring occasionally, until onions release their liquid and are uniformly translucent, about 20 minutes.ģ. Add butter to now-empty pot and melt over medium-high heat. Drain macaroni and set aside in colander.Ģ. Add macaroni and 1 tablespoon salt and cook, stirring often, until tender. Bring 4 quarts water to boil in Dutch oven. Adjust oven rack to upper-middle position and heat oven to 450 degrees. 8 ounces Gruyère cheese, shredded (2⅔ cups), dividedġ.8 ounces Monterey Jack cheese, shredded (2 cups), divided.3 pounds onions, halved and sliced thin. ![]() ½ teaspoon table salt, plus salt for cooking pasta. ![]()
